Are elderly citizens satisfied with their food? According to a survey conducted by a national association for the defence of consumers and users (Consommation Logement Cadre de Vie, 2012) in 251 people using a meals-on-wheels service and 1217 people living in an institution, more than 80% gave an overall positive appreciation of the meals. These results, however, need to be interpreted with caution, as underlined by the sociologist JP Corbeau. Indeed, the generation interviewed in the survey are not very demanding (they experienced years of deprivation during the war). In addition, the elderly are often reluctant to express dissatisfaction with the services on which they depend. Finally, though overall satisfaction was good, there was some criticism. Complaints concerned the lack of variety in the menus, insufficient seasoning and too few meals prepared on site with fresh produce. Meat was often too tough and too often cooked in a sauce.
