- Cotyledons elliptic or ovate, tip rounded, more or less petiolate.
- Leaves entire elliptic or ovate, regularly dentate.
- Leaves entire, rounded with spaced teeth.
- Height: 80-160 cm when flowering, thick taproot.
- Stem fluted, robust, angular with strict branches.
- Lower leaves very large with a thick petiole, cordate with thick veins. Cauline leaves rhomboid or elliptic.
- Flowers greenish or reddish, 2 to 5 stigma. 5-lobed perianth, 5 stamens borne on a thick disk.
- Fruits : achenes applied to the persistent and accrescent calyx. Seed lenticular and horizontal, axillary glomerules in diffuse spikes.
- Halophilous plant. Risk of contamination in seed-crop cultures. Includes the very numerous varieties of beet: sugar-beet, mangels, red-beet, hybrids and annual derivatives.
